I often get asked for healthful dinner ideas. Eating healthy is a priority in our family, and weeknights don’t always lend themselves to lengthy meal prep, so I’m always looking for easy, fast and healthy when it comes to meal planning.
Fish is a mainstay for us, and salmon, cod and halibut are favorites. Fish is a great healthy meal choice – high in nutrients, and low in calories, fat and sodium. We were invited to dinner last summer, and I immediately took notes on how our good friend, Richard, prepared the main course. I’ve made it several times since, and it’s delicious, easy and basically foolproof. Served with roasted potatoes or a combination of roasted vegetables and a salad, it’s one of our favorite weeknight meals.

Grilled Halibut
2 – 4 halibut fillets, fresh or frozen
Fresh lemon
Garlic, minced
Melted butter
Chives
Mix lemon, butter, garlic, and chives to taste. Marinate halibut in lemon-butter mixture, and baste with any sauce that remains. Grill 4 minutes on each side and you’re done!
